These chocolate cupcakes with peanut butter frosting are a perfect sweet surprise for your special someone. What’s great about this recipe is that it makes just enough for two people. And it’s super easy and fast to whip up!

Adorned with peanut butter cookies, these moist chocolate cupcakes are delicious and make the house smell so good while baking. Your sweetheart will be sad you only made enough for two! But let’s face it, sometimes we don’t want to make a whole batch of 12 cupcakes. I don’t know about you, but I don’t always have enough self-control to make a whole batch of cupcakes.

I adore Valentine’s Day. Loaded with all things girly, this holiday is definitely one of my favorites. I love all things girly and romantic. Almost as much as I love the combination of chocolate and peanut butter.

Did I mention the cookies are also loaded with peanut butter M&M’s? Oh yeah. I went there. I just had to add a pinch more of that yummy sweetness you get from combing peanut butter and chocolate! You and your loved one won’t be able to resist the chocolatey goodness combined with the creamy peanut butter frosting and soft cookies.

Valentine’s Day Cupcakes for 2

Destiny Hobbs Moments in the Kitchen

A Delicious Valentine Cupcake that is quick and easy.

Peanut Butter Cookies for 2:

2 tablespoons of butter, softened

2 tablespoons of peanut butter

2 tablespoons white sugar

1 egg

¼ c. whole wheat flour

pinch of baking soda

pinch of baking powder

Preheat oven to 375F.

In a small bowl mix, the butter and peanut butter until smooth.

Add the sugar and stir until combined. Add the egg.

Mix in the flour, baking powder and soda.

Let chill in the fridge while the oven preheats.

Bake for 8 minutes. Let cool completely.

 

Chocolate Cupcakes for 2:

3 tablespoons whole wheat flour

1 tablespoons white sugar

1 tablespoon unsweetened cocoa powder

1/4 teaspoon baking soda

4 tablespoons milk

1 tablespoon vegetable oil

Preheat oven to 350 degrees.

Line 2 cups of a 12-cup muffin tin with paper liners.

In a small bowl, add flour, sugar, cocoa powder, baking soda and salt.

Add in milk and oil until just combined. Divide batter evenly between cups.

Bake for 15 minutes.

Let cool completely before frosting.

 

Frosting:

½ c. powdered sugar

1 tablespoon peanut butter

milk

In a small bowl, add peanut butter and powdered sugar.

Slowly whisk in milk until you get desired consistency.

Frost chocolate cupcakes once they are cool.

Place a peanut butter cookie on top and enjoy!
