Are you ready for the big game on Sunday? If not, now is the time to plan out your activities and the menu. Luckily, some local Albuquerque moms shared their favorite party recipes with us. Check out the top 3 recipes below. And thanks to everyone who entered the Game Day Recipe Contest presented by Gilly Loco.


Flautas Loco

Ingredients
12 Uncooked flour tortillas
3 Shredded chicken breasts (or substitute shredded rotisserie to make it even quicker & easier!) 
8 oz Cream cheese
2/3 cup Gilly Loco Ghost Pepper Salsa
2 cups Mexican blend shredded cheese
  1. Preheat oven to 425 degrees F.
  2. In a medium sized bowl, combine chicken, cream cheese, salsa and shredded cheese.
  3. Divide the chicken mixture evenly between the 12 tortillas and roll tightly.
  4. Generously spray baking sheet with cooking spray and place rolled flautas in a single layer with the seam side down on greased pan.
  5. Spray tops of flautas with more cooking spray.
  6. Bake until cheese is melty and tortillas begin to turn golden brown, about 10-15 minutes.

Ham & Swiss Sliders

Ingredients
1 lb Deli ham
1 Onion
3 tbsp Dijon mustard
2 tsp Worcestershire sauce
3 tsp Poppy seeds
1 package King’s Hawaiian Rolls
2 sticks Butter
1 lb Swiss cheese
  1. In a medium-sized saucepan melt the butter and mix in mustard, Worcestershire sauce, poppy seeds, and onion. Simmer until the onions become translucent about 5 minutes.
  2. Cut the entire package of rolls in half. Do not separate them, keep them intact.
  3. Lightly grease the bottom of a 9″ x 12″ baking pan.
  4. Place the bottom half of the rolls in the prepared pan and spread with half of the onion mixture.
  5. Layer the ham and cheese over the onion mixture. Cover completely from edge to edge.
  6. Replace the tops of the rolls and spread the remaining onion mixture evenly over the surface.
  7. Cover pan loosely with aluminum foil that has been lightly sprayed with non-stick spray. Place in the refrigerator for at least 4 hours or up to 24 hours (the rolls will absorb the butter mustard sauce as they sit).
  8. When you are ready to serve, remove rolls from the refrigerator and preheat oven to 350°F. Place the covered pan in the oven for 10 minutes.
  9. Remove foil and bake uncovered for another 10 – 15 minutes, or until tops are light golden and slightly crisp.
  10. Transfer rolls onto a cutting board, cut and serve.

Queso Without The Kind of Cheese that Rhymes with Schmelveeta

Ingredients
1 lb. ground beef browned and drained
1 8 oz. block full fat cream cheese
1 cup sour cream
1 lb. grated Monterey Jack cheese (do not use pre-shredded cheese.) 
1 10 oz. can of diced tomatoes and green chile (such as Rotel)
  1. Begin by browning 1 pound of ground beef. I suppose you could use ground turkey, but I don’t think we’re going for low fat here. Low carb? Totally. Gluten free? Yep. So basically healthy. Queso is a health food.
  2. Drain the ground beef and place it in a crock-pot.
  3. Add a block of cream cheese, a cup of sour cream, and a can of diced tomatoes with green chile.
  4. Add a pound of shredded Monterey Jack cheese to the crock-pot. I have found that for this recipe you want to buy a block of the cheese and shred it yourself at home. When I’ve used pre-shredded cheese, it has not melted well because of the cornstarch or potato starch coating on it.
  5. Let all this melt into cheesy goodness. Stir regularly. Serve with tortilla chips and celery sticks.
