The EASIEST, Healthy Chicken Lettuce Wraps

I am always searching for quick, simple, and healthy meals for my family. Chicken lettuce wraps were always something I wanted to make, but I could never find a reasonable recipe. This one is awesome because you literally chop everything in a food processor, cook it in one pan, and it’s done. The ingredients are easy to find, and you may even have most of them on hand already. For those of you on Whole30 or Paleo, just substitute the olive oil for avocado or coconut, and the soy sauce for aminos or tamari.

Chicken Lettuce Wraps

Ingredients:

  • 1 pound of chicken (you can buy ground or grind it in the food processor)
  • 1 package of mushrooms
  • 8oz can of water chestnuts
  • 2 green onions
  • 2 tsp ground ginger
  • 1/2 tsp minced garlic
  • 1 tbsp olive oil
  • 1/4-1/3 cup soy sauce
  • Lettuce leaves (I like butter lettuce for this)
  • your favorite dipping sauce

Instructions:

  • Add the oil to a saute pan
  • If you have whole chicken breasts or thighs, finely chop them in the food processor and add them to the pan
  • Finely chop the mushrooms, water chestnuts, and green onion in the food processor. Add to pan.
  • Add the soy sauce, starting with a few tablespoons. 
  • Cook over medium heat until the chicken is lightly browned and the other ingredients are cooked through.
  • Add more soy sauce to taste. 
  • Scoop into lettuce leaves, top with dipping sauce, and enjoy!
