Healthy & Easy Vegan Pancakes :: A Kid Approved Breakfast

This past April our family switched to a vegan diet. We did this primarily for health reasons and you can read more about that here if you’re interested. It was a big change for us and required finding and coming up with a bunch of new recipes and meal plans.  

One of our son’s favorite things for breakfast is pancakes, so I had to find a good and easy recipe we could make in our regular rotation, AKA most days of the week for this one – he loves it that much.  I tried multiple recipes that I found online as well as in cookbooks, and edited until I came up with my own that works for us!  It’s actually pretty healthy and super super easy! We generally make just the basic recipe, but I have also included some fun ways to change it up!

Vegan Pancakes

Ingredients

1 cup whole wheat flour

2 Tbsp ground flax seed

1 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1 tsp vanilla

1 1/2 cups unsweetened almond milk or other non dairy milk of your choice

Directions

Preheat pan with a tablespoon or so of olive oil

Add dry ingredients to bowl

Add wet ingredients to the same bowl

Mix, but lumps are okay!

Spoon batter onto preheated pan for desired pancake size (usually a couple tablespoons)

Cook for a couple of minutes on each side until golden brown

Mix it Up

Try adding some fun ingredients!

Blueberries

Chocolate chips

Mashed banana

Peanut or almond butter

Oats

Chopped nuts

Pumpkin and pumpkin pie spice (about a 1/4 cup pumpkin and a tsp of spice – and probably cut back on cinnamon)

Diced apples

When adding in extras, you may need to adjust the milk amount up or down, depending on the ingredient you’re adding. The best part is this recipe is so forgiving and so easy to adjust! 

Also – play around with the toppings! Maple syrup is the obvious choice for pancakes, but heating some berries, plums, peaches or bananas in a pan can also make for a yummy topping with a little less sugar! Or try peanut butter and fruit!
