Yummy Mexican Street Corn :: A Perfect Side Dish for Taco Tuesday!

I don’t know about you and your family, but we are all about that street corn! Several years ago, my hubby and I decided to try our hands at making our own elotes, as we couldn’t find it served anywhere in the city. We’d make it using Creamland Fiesta dip with lime juice and feta, or with sour cream, lime juice, feta, and paprika, or sometimes a combination of those two. We’d eat it with burgers, tacos, or even fajitas. Not only is this one of our favorite recipes because it’s so yummy, but it’s super simple to put together quickly!

Flavorful Mexican Street Corn

Adapted from Let’s Dish Recipes

Ingredients:

8 ears of corn on the cob, roasted or grilled with melted butter
3 tablespoons of mayonnaise
4 tablespoons of sour cream
2 tablespoons of lime juice
2 teaspoons of chili powder
Cayenne pepper, to taste
Salt and pepper, to taste
1/3 cup of feta cheese
Chopped fresh cilantro, to taste (optional)

Directions:

When the corn is cool enough to touch, cut kernels off of the cobs and pour into a medium-sized bowl. Mix in all other ingredients to the bowl and stir well with spatula.

Pair your tacos with this pineapple avocado salsa and enjoy!
